Katayef are the Arabic version of pancakes, but they are usually filled with Kashta, Crème Patissiere, or nuts. Our version of Katayef today is very simple and easy to make. You can choose the filling that suits you; either crème patissiere that is gluten-free and dairy-free, or the traditional Arabic kashta that is also prepared gluten-free.
Ingredients
Servings: 12-15 pieces
- 1 can Seven Up
- 1 tsp baking powder
- 1 tsp apple cider vinegar
Method
- Put all the ingredients in a jug.
- Whisk quickly until bubbles rise and you get a smooth dough.
- Heat a pancake griddle like Krampouz or a non-stick pan.
- Pour a small ladleful of the mixture and cook like pancakes.
- Once bubbles rise on top of the katayef and it dries up, remove from the heat.
- Lay on a wire rack to cool, then wrap with cling film, or fill with gluten-free dairy-free crème patissiere or with gluten-free Kashta or some nuts like pistachios or walnuts.
- Serve the Katayef with sugar syrup.
